It's not a matter of editors, I think.
The following console emulator is very powerful, I can su and vi any file in any nand partition on my Allwinner tablet:

I'd be interested in other similar software, btw.
If you have no access to market (like me), you can find a direct download googling for it.
This is just a `works for me', of course.
Alternatively, boot it through a microsd with a linux on it.
